Carrot Patties
What You’ll Need
  • 3 large carrots, grated (about 2 cups)
  • 1 onion, finely chopped (optional)
  • 2 eggs, lightly beaten
  • 1/4 cup bread crumbs
  • 1/4 cup flour
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • canola oil

Directions
  1. Grate the carrots (older and careful preschoolers can help with this step) and combine with the onions (if using) eggs, bread crumbs, flour, salt and pepper.
  2. Heat about 2 Tbsp oil in a large non-stick pan over medium high heat. Drop scant quarter cups of the carrot mixture into the pan and press down with spatula or fork.
  3. Cook for about 2-3 minutes or until golden brown. Flip patties and cook an additional 2-3 minutes.
  4. Transfer to a plate covered with a paper towel.
