What You’ll Need
- 3 large carrots, grated (about 2 cups)
- 1 onion, finely chopped (optional)
- 2 eggs, lightly beaten
- 1/4 cup bread crumbs
- 1/4 cup flour
- 1/2 tsp salt
- 1/2 tsp black pepper
- canola oil
Directions
- Grate the carrots (older and careful preschoolers can help with this step) and combine with the onions (if using) eggs, bread crumbs, flour, salt and pepper.
- Heat about 2 Tbsp oil in a large non-stick pan over medium high heat. Drop scant quarter cups of the carrot mixture into the pan and press down with spatula or fork.
- Cook for about 2-3 minutes or until golden brown. Flip patties and cook an additional 2-3 minutes.
- Transfer to a plate covered with a paper towel.
